I'm really looking forward to rounding out my kitchen knife collection. Currently my 9" Sikayo is holding down the fort doing everything except bread.
 
I have a 6" Sikayo that does see some use. It is a great utility kitchen knife.
 
Bread knife? Like as in serrated? You don't need serrated if your chef's knife is properly sharp.

Anyway, is the Sikayo out of production? I can't find one anywhere!

Not sure, last time I spoke to them they said the bread knife design was “way different” then anything that already exists and worked incredibly well.
 
IWhen I spoke to heather, (or jessie? i cant remember it was a while ago) I was told there is currently no other sikayos in the works at the moment. There are plans, as in this:
There are 4 blade lengths planned for the set of Sikayo Chef Knives - a 4" blade and a large bread/slicing knife will be available in May/June 2009 (guess this was a gross underestimate)

but they arent in active development at the moment.

I really want to pick them up, I think any knife nut should have a few kitchen knives. Another one I wanna grab is (just for the sake of mentioning) is a Konosuke ZDP-189 Gyuto, and perhaps a Richmond Remedy.

I have been thinking a lot about expanding my knife collecting into kitchen cutlery and straight razors... afterall why not?!

I have my eye on a really nice Thiers Issard Limited Edition.

But that has nothing to do with sikayos so I digress...

But yeah, beautiful (unique?) looking knives.

I have been wanting one of these since they came out, but never got around to getting one. I recently scored one on the exchange and am waiting for it to arrive. I got the 6.5" version as I feel it be more of a all around kitchen knife over the 9".
They are hard to find new, but several crk dealers have them in stock. I had been looking for one over the weekend and did not pull the trigger, then shortly after on the exchange, one showed up....lol.

I will be sure to post my thoughts once it arrives and use it for a bit.
