Any Suggestions??

Would anyone recommend a good chefs knife for slicing meats and dicing vegetables. Basically looking for a very sharp general purpose chef's knife to use in my kitchen. I really enjoy using Benchmade knives whether for collecting or carrying on myself. They carry a 3 piece kitchen knife set called the prestigedges. I've also heard some great information about Murray Carter's knives. Anyone that has had some experience kitchen/chefs knives... I would greatly appreciate your feedback. I'm looking for something sub $300 if at all possible.

Al Mar Kitchen knives surpass Benchmades IMO. Look good and all the right materials for a great knife. Laminated VG-10 Blades, full tangs etc.

I will put in a second vote for Murray Carter. He makes some really great knives, and is a great guy to do business with.
 
I owned a couple of Fallkniven fixed blades before I noticed that they also made kitchen knives. The idea of a kitchen knife as good as my Northern Lights NL2 and NL4 seemed appealing, so I ordered the K1 kitchen knife.

I've now been using it for almost eight months, and haven't picked up any other kitchen knife since it arrived.

The K1 has an 8" VG10 blade (which takes and holds an excellent edge), and a very comfortable zytel handle (that is non slip and easy to keep clean)
 
Well I decided to go with the Murray Carter Hand Forged Series 8" Wabocho in Super Blue Steel. Hey Yam I thank you for the advice with the Globals.. I went to the local knife shop and checked them out. They were well balance and seemed like all around very nice and well designed knives but unfortunately both chefs knives I held were nothing close to what I'd consider sharp. Oh well.. anyways if Mr. Carter's knife is as sharp as I hear his knives are I'll have just what I've been looking for. Thanx again for the advice everyone.
