Used to go every year for 30+ years. Recently we switched to dauphine island to get away from the busyness of GS.
There's lots of mini golf places, a decent water park and lots of beach. The fort Morgan is cool to visit. There's a pretty Good knife shop in tanger outlet mall (st Nick's).
As far as food, the best going is lamberts in foley. But, and this goes for any restaurant there, you better go early 1.5-2 hour waits in peak season are common. We used to just bring our own and cook in the condo. Oh, lulu's (jimmy buffets sister) is a good setting and fun with ok food. There's also the hangout on the beach. There really no stand out , gotta visit place though.
Other than that, beach beach beach. That's why I go lol.
Tip. To get there, take the expressway. During peak season, 59 is a parking lot from foley to the beach. Orange beach expressway if coming from mobile or backroad and through the NAS in Pensacola if other way.
Oh! How did I forget. The naval air station in Pensacola has one of the best air museums in the country. And the USS Alabama park in mobile at the tunnel is cool to visit.
