Their hunting knives caught my eye, was wondering if the extra coin is worth the "ultra high carbon" ... albeit im not going to be processing moose everyday, maybe a rabbit here and there (haha) so the UHC is probably over kill... anyway, any input, anyone?
I have three Roselli. One hunter and one carpenter in UHC also a carpenter in Roselli regular steel. I prefer using the plain steel one. UHC is a real b*tch to sharpen and IMHO doesn't seem to take or hold an edge significantly better than the plain carpenter. Also, I just prefer the smaller carpenter size. You can't really go wrong with either.
I have the UHC carpenter. It's got a full scandi grind, no micro-bevel. I find that it gets EXTREMELY sharp, but the edge can be brittle and chips easily. I decided I'll only use if for delicate woodworking chores, such as shaving just the tiniest bit to make a tenon fit.
