I have been collecting and sharpening knives for about 8 years now and it's been only recent that i have acquired enough skills on my various benchstones that i have came up with the conclusion to the most efficient method for sharpening SS. Japanese Water Stone cuts down SS like nothing else and its surface wears away so the pores don't get clogged up. So if any of you are having trouble sharpening SS just grab a water stone and you'll soon solve your problems. my 2 cent.
