Anyone Pickled?

Food that is? Does anyone preserve food by pickling it. I have done Fish which turned out pretty good. I would like to find more info on things like how long food will last without refrigeration and such. Does anyone have any good sources.

Back in my beer drinking days, (long past) Pickled stuff didn't last long, it all went good with beer.
 
I think my wife uses the Ball canning book, and if she doesn't it is still a good book to have. She has done Eggs and well Pickels, and as a kid I remember my dad doing carrots.

I never was to bad but those darn pickled eggs and beer were quite a combo.

I will check out that book. I have been pickling some Belle Peppers lately. My folks and grandparents pickled a lot of things before we had electricity, a time which I well remember. They had all kinds of stuff in the root cellar in those 20 gallon pickle crocks. My mother made lots of pickles. My wife does but now that we have all the modern conveniences, she says she never has time:confused:
 
I've done beets, cucumbers and hot peppers. There is a good book somewhere around here that I'd have to dig up that we used for the recipes.

The key thing is to sterilize the crap out of everything as any bacteria will mess up the pickles. They will taste bad at best or do you harm at worst. If you're pickling in vinegar, make sure EVERYTHING is completely submerged. Any veggies sticking out of the brine/vinegar will go off and potentially ruin the batch. If you've made beer or wine, you're familiar with the importance of cleanliness and sterilization. I've only tried vinegar based pickles. This year we might test the fermented pickles; probably making kimchi if we grow cabbage in the garden.

I have pickled many times...some good advice above about keeping things sterile. I always keep the lids and rings at a low boil and handle them with tongs. How did your fish turn out? That is something I have always want to try! What type of fish did you use?
