It's a prop knife. Spring loaded wrist knife; like Travis Bickle's backup pistola.

Yep, he stole it from an assassin, he's probably a templar, just hope it doesn't open while your hands is pointed down rather than up...I've seen it, and yes that's an Assassin's Creed knife. I wonder how functional it would actually be, and how that particular one works. It was pretty cool.
Also pretty cool to see them use a Ka-bar USMC. Though I was bothered when the one dude was stabbed in the chest with one and didn't instantly (or even gradually) die.

I actually re-watched the older Punisher movie from pre-Disney Marvel when Lion's Gate did the film. There are quite a few knives in there, too.

OP, you'll be hard pressed to find anything like that for sale. I'm sure you could build one with the right equipment, though I'd personally be afraid of slicing my wrist open each time I deployed the damn thing.
