Just watched this today. Another great vid! It really demonstrates how important it is to remove the burr, and you talk about the specific characteristics of a softer stainless steel, which I found especially useful. You make a great point at 08:08 when you talk about starting to lighten up the pressure on the edge-trailing strokes until you're just touching the stone because the softer steel wants to form a burr more readily. I'll be mindful of this the next time I sharpen a SAK, which will be very soon since the SAK I sharpened in my original sharpening video is due for a sharpening.
Do you pretty much stick to water stones now, or do you still occasionally use diamonds? Believe it or not, I actually bought a $20 Norton india stone and some Lansky hone oil just to try it out and see what it's like. I haven't used it yet, but really looking forward to it.
