Arcos boning knife

I am using one of Arcos 5 inch straight stiff boning knives with nitrox steel(got ir for 10$) and am very surprised how well this knife performs,and what kind of edge it takes.Any other experiences with Arcos?

No idea. But being that Arcos is a long-established Spanish cutlery maker and that their "nitrox steel" is hardened to HRC 56,
I would guess that it is a typical Krupp 4116 variant, as found in all European cooking knives.
