Are all ESEE knives diffentially heat treated

No, the knives are not differentially heat treated.

The very, very early Rowen blades were but it was changed early on. Not even sure there are any differential blades out there.
 
You're right that the 3rd party vendor states it's differentially treated, but that does not trump the ESEE website where it says they are heat treated to 57 RC.
 
I think you are confused. They are heat treated to cut through a differential.

I haven't cut through a diff' at work, but I've certainly sliced up plenty of RC3-thick belly-pans and other stuff at work with my trusty Izula. Rowen is the man.
