Are Canal Street knives factory sharp?

The only one I have, a half moon trapper was sharp out of the box. I don't know what your definition of "really sharp" is, so I can't comment on that. It will not whittle or tree top hair, but it will take it off your arm without undue effort.

I have two Canal Street knives. I'd say Ed's description pretty much fits mine.

Edited to add: Which is not to say that I didn't further refine the edges to meet my own requirements.
 
My one CSC knife (Hawbaker muskrat) came as sharp as I can expect.

I'll add my 2 cents. The Canal Street knives I have all came with a more than acceptable edge.
 
When I had a few slipjoints and a fixed D2 blade of theirs, they arrived decently sharp, no complaints. I just didn't favour their very light pull/springs.
