Arkansas stone?

yes, it would be enough for carbon and easily sharpennable stainless, and with patience, with other slightly harder to sharpen stainless steels.
 
depends on your blade steel. I would prefer a diamond sharpener. No worries about what alloys it can sharpen, or breaking it if you drop it.
 
Arkansas stones or some type of rock has been used since the beginning of time. So yes it'll work, i always used some type of oil on mine though. But these days there are so many options, the diamond stone will definately cut steel faster though. But your arkansas stone will work although are more fragile than alot of the newer gizmo's/devices.
 
That's mostly what I use. However, you may want to look at a smaller stone as opposed to a bigger one, it'll just make it easier to pack an carry. They make the ceramic stones small enough to fit into your wallet.
 
Absolutely. I have a couple, coarse and fine. Honestly though, I don't bring sharpening stones on camping trips. I figure a blade will stay sharp enough for a week or two.

Hardheart makes a very good point as to the compactness and durability of pocket diamond hones. That said, I personally feel that the right Arkansas stone combination will give a more rewarding sharpening experience than diamonds. A medium should do you just fine.
