As simple as a steeper angle.

Sheesh! I had a shaving edge on my Ritter RSK Mk1 a while back.
Couldn't duplicate it. DAMN!
Then yesterday I just used a steeper angle on the MINI Ritter I have and ...bam.... hair poppin sharp again.
Just did the big one. Same results. Long lasting and very sharp.

My memory must be gone. :o

I've experienced this in the past, I'm pretty sure I know why the steeper angle is giving you good results. This isn't meant to sound condescending. Sometimes when you sharpen at too shallow an angle you aren't actually sharpening all the way to the cutting edge. If you start sharpening at a shallower angle than the knife is currently sharpened at you aren't removing steel at the cutting edge. The "sharpie trick" is a great way to check your sharpening and adjust it accordingly. If you already knew that, ignore this post!

Either way, I'm glad to hear you got your knives back to razor sharp! I know how frustrating it can be to have stubbornly dull knives

Yep, I haven''t used the Sharpie for a long time.
The RSKs are very thin edges to begin with so I never considered coloring them.
My BIG mistake was in ...wanting..... LOTS of shallow strokes to compensate for getting to the cutting edge.

I've done this same mistake before. Seems like S30V is a little different from VG-10 in the angle it likes.

Hope I can....remember.... from now on.
