Asymmetrical vs Symmetrical Edge

Has anyone reground the edge on a new Busse to a conventional symmetrical edge? If you have, which did you like better, asymmetrical or symmetrical?

I did not take it off for performance reasons, I was just curious. It now has a full convex grind which is what I would prefer - but there are disadvantes in terms of ease of sharpening over the dual grind which is a stronger performer than a v-grind.

I also took off the conves grind and put on a typical "V" grind. Personally, I found little difference in performance and an increase in sharpening ease. That being said, I freely admit that the convex edge is stronger and resists deformation more so than the "V" grind I put on mine. I just took the convex edge off because I kept developing what Jerry called a "micro-feather" burr which I just couldn't seem to get rid off. I got P.O.ed and removed the convex and eliminated the issue. One of these days I'm going to get a SH and I'll leave the convex on that one.
