Just received the Atoma plates for the edge pro (work sharp pro) system and am wondering do I need to do anything g first? Should I use water with them? Thanks in advance.

Some use them without water. I prefer to use water.

Expect them to make deeper scratches until they break in a bit. Some like to hurry the break-in process along by running some metal over them.

I got the 400 and 1200 and noticed they are pretty rough out of the box.

Good to know they will soften with the cuts...?

I have the finest one, I think 1200.
I can't imagine Coarser ones.

I always break-in my diamond plates before using but I don't use my knifes to do the break-in but a piece of HSS steel.

I forgot to mention …
The break-in does not apply only for those cheap diamond plates I use but for all diamond plates.
I found a guy on internet who wrote two articles (with high resolution SEM images of DMT diamond plates) what break-in does to the plate.

I can't comment on water because I use them dry but I have seen 'NorthWest_Knife_Guy' used soapy water on his DMT pocket folding diamond sharpener.

I ran these on a cheaper kitchen knife to break in. I then touched up a Native 110 with the 1200 using very lite passes. The plates are very smooth.
