I wanted to post-up a little review of my new kitchen weapon-of-choice !
I'll start by saying that I'm not a professional chef, just a guy who likes to cook, likes sharp knives and . . .likes to eat!
The Knife:
ATS Knifeworks AEB-L Kitchen Super Slicer . . .just received from a super nice guy and great knife maker, Nick Nivette from ATS Knifeworks.
Blade: 3/32 AEB-L Stainless steel BOS Heat Treat to 61RC with 25 degree edge.
Handle: Orange G10 with Black liners.
Sheath: Kydex - Quick-Draw LOL!
First Impressions: The first thing you notice about this knife is the design. It has a very cool flow to it and is very flat along the distance of it's cutting edge. This makes the knife great for food prep. I always find (prior to this knife) that I need to finely chop things like peppers, garlic, onions etc. This blade design allows you to cut/chop/dice things very quickly without missing a beat or a scrap of food. When you're done cutting/chopping things into oblivion, the knife's flat-line blade allows for easy scraping of small bits and moving them onto your cooking surface. The knife is called a "Super Slicer" and that is the understatement of the year! I don't have any other real kitchen cutlery to compare it with, but I have a pretty good selection of other knives that I have used for food prep and nothing . . .I mean nothing . . . comes close to the cutting edge of this knife- right out of the box. As a side note, ATS offers lifetime sharpening for free! It was so easy to quickly slice onions, cheese, Poblano peppers and Chorizo thin enough to read through.
The ergos/fit and finish: The ergos on the knife are great and it fits my hand perfectly. Nick's finish on this knife is perfect. The Orange G10 is smooth and offers up no hotspots or rough edges. Everything is put together seamlessly. This is my first blade from him, but certainly not my last. The Kydex sheath is very neat and the blade has good retention. I plan on storing it in the sheath around the house and I will attach a "dangler," that I made, when I take it car camping. The sheath is a great idea and he offers them in Kydex or Leather for an additional, but perfectly reasonable price.
I attached some pictures of the "Super Slicer" in action. This was Chorizo and Poblano Quesadillas with Monterey Jack cheese . . . no pictures of the finished product . . .sorry! It was so good that I forgot to take pictures before scarfing it down
