Austin/Central TX Knifemaker help

I want to try out grinding a couple of knives and see if it is something I want to do before I invest in a grinder and some other tools.
I bought 2 1095 waterjetted blanks from USA Knifemaker and have the materials to finish the blades. I'm willing to pay for any belts or materials that I use in your shop.
My job as a guitar tech/roadie is on hold for awhile and I want to see if I have any skills at making knives. I have set aside some money to buy a grinder and some other tools for knifemaking, but I want to make sure it is something I will enjoy and can do before I make that investment. I'm also looking for some shop space so that I can setup a workspace for building pedal boards and making up custom guitar cables for other bands. I can't really setup any kind of shop at my house because of the noise and lack of a shopspace.

I have a pretty well outfitted KMG grinder and lots of tools, along with some extra stock of S30V and ATS-34. If you want to make the trip to Houston, I could give you some lessons and training. I'm not a master, of any sort, but I believe I could help you decide on purchasing a good grinder and using good steel for your knives.

I'd like to show you how fast you can profile a knife blade with a KMG or similar grinder. Unless you are producing 100's of the same blade, there is no need to have anything waterjet cut.
