What exactly are the different eyes for an axe? I'm looking to buy a handle and they all say Canadian eye. Is there also an American eye? And what's the difference?

Are you in Canada?
I've never seen handles labeled this way before, but I think Canadian axes often had / have larger eyes.
I'd expect a Canadian handle to have a larger tongue, usable for either but requiring a little more carving to fit an American axe.
 
I am! Thanks for the info! Is it okay to carve the eye down to fix an American axe head though? It seems like it could create a weakness. Maybe it's more of a problem for mauls?

Do you mean tongue? If so, no, it's not a problem at all.
