Axis Deer...it's what's for dinner. (caution blood)

If you've never had Axis deer, it REALLY puts white-tail to shame. If you slice it really thin and grill it with onions, it makes a heck of a philly cheese steak sandwich :)
Oh and the bushcraft, works wonders...

We shot one doe a year on a buddy's place in Kerrville. Axis makes whitetail taste like taco bell. I never thought of doing the philly cheese steak though. That just made the list for this year.

Agreed. I threw a little fajita seasoning and garlic on it and grilled it with some "road kill" onions. It's harvest season for onions down here and the onion trucks are always over loaded. When they drive down the road, the drop red and white onions everywhere in the bar ditches. It seems like a waste to let them rot so this time of year, we're always knee deep in rescued onions. We eat lots of pico de gallo (with home grown jalepenos & Serranos) and look for things to make with onion. This year, I had some axis and the "Road Kill Onions" so philly cheese steak AKA Hill Country Cheese Steak just seemed a no brainer. Glad we did....
 
Looks really good man, I'd love to try that some day. You can't beat a good Philly. Nice knife too!
