Will I ruin the edge of my b10 or any convexed busse for that matter if I just sharpen it on a stone? My worry is that it will make the edge to thin and nit as durable. I know how to sharpen on a strop, but I don't always have one, any thoughts? Thanks.

First, i know effectively nothing, so consider me to be a blathering idiot, and take my info accordingly

Now that that's out of the way, yes, thinning the edge with a stone (i'm thinking katana thin) will definitely make the edge less durable, but then, INFI is already extremely durable, so if you want it to be a slicer, a thin edge will be okay. There are already some very thin edged Busse knives that don't seem prone to damage

I wouldn't thin the edge on a chopper much.

The B10 is just INFI, not M-INFI

And no, I don't think you will ruin the edge with the stone ( I don't recall if the B10 is convexed or v edge) but you have to thin it out alot to do any real damage to it
