Now that I am back from my trip to France, I am posting more pics of the Laguiole en Aubrac knives I bought while I was in St-Emilion from the cutler named Didier. I was fortunate enough to have bought a single knife from him last year so as I was back in the region for a good friends wedding, I made certain to stop by again for more... Please forgive the pics as I am not much of a photographer, especially with a phone!
The first 3 knives include the one I purchased last year (the 13cm 3 piece with the juniper wood handle). The other two are what I just acquired. The 11cm 2 piece has the cow horn scales and brass bolsters with a carbon blade. I wanted it to be super traditional as this is the knife I have seen carried most here by all the local farmers. It is super smooth to the touch and feels wonderful to handle! The 12cm 1 piece is my custom built baby! The scales are made from rams crust with the hand hammered bolsters and the spine is nicely carved as is the blade guard area. The blade itself is the Brut de Forge carbon type and is hollow ground moving towards the edge. Pictures just don`t do it justice! This baby is really beautiful...
