I am trying to figure out how to rig my backpack to carry my bowie on the outside and have it easily accessible
does anyone have any suggestions?

We would need to know what kind of backpack you have. One of my most-used packs has MOLLE webbing on the sides, so attaching a sheath is almost as easy as putting it on a belt.

When I backpacked, I used to carry a bowie on the shoulder strap handle down. This kept it off my hip where it hung up on my pack and since it was handle down, I could carry it kinda high and still get it out in a hurry.

And after several days/weeks of carrying handle down... check the "whatever that holds the tool to the sheath" it may get loose stretched and one day you will be backtracking looking for your bowie. This is my carry method also... but with some redunduncy applied around the handle. Two snap straps are just as easy to pop loose...

how do things get attached to the molle system? I have seen the packs, yet must be so dumb that I cant figure out how they work

Either that or they are designed for it and have a series of slots in the back with a long strap with a button on the end - lots of pouches available like that.

With MALICE both pouch and platform have the identical webbing, and you use the clips to attach them. With MOLLE the platform has the webbing, and the pouch has the straps with buttons to attach to the webbing.

I do a lot of hiking and this is probably the best recommendation, here. You want it accessible, and many packs have loops, pockets, and other ways to attach or carry fixed knives and folders. I used a pocket on the shoulder strap designed for a GPS/Cell to carry my favorite folder.
