Well I haven't posted many pics recently in partly because of photo uploading laziness and because bladeforums and Busse are dangerous to my wallet but here are some belated holiday epic bacon creations as well as some infi and a couple of spoiled pets. These are my versions of Skunk's infi guard cats. Thanks for looking and my apologies for any bad quality cellphone photos.

Some grilled shrimp brochettes butterflied with jalapenos, jack cheese and a slice of bacon with creole seasoning

New SOS duo, my first orange Busses. I think the slabs burned my corneas when I unboxed them

RELEASE THE KRAKEN!
photo-10.jpg

My buddy had me order him a B10 LE when I ordered mine, and since he was overhauling/cleaning his apartment, he had a couple maker's 46s and decided to chop his desk chair apart that he didn't want anymore to see the power of infi. I stabbed it through the 1/2 inch-3/4 inch seat with around 4 blows and the lateral strength of infi is no joke. One chop into the bottom of the legs followed by a twist of the wrist basically destroyed each leg. The knife was shaving sharp afterwards and he was blown away by the performance.

I took an 8 lb pork tenderloin, cut in half for ease of handling, coated it in brown sugar and mesquite rub and 4 pounds of bacon wrapped 360, and threw it on the traeger smoker for 5 hours. This is was a dumb idea to prepare this on top of a full Thanksgiving turkey dinner, as we could hardly get up from the table afterwards.

It's just no right to post great dishes like this and not give the cooking time and tempature :)
Knives and food look great.

BACON!!!!!!!!

Damn, that looks tasty.

And that snakeskin is AMAZING!!!

That tenderloin looks amazing. I really enjoyed the Busse remodel pics as well.
Thanks for sharing,
Garth

Looks great, what temp did you have your Traeger set at, I might have to give that a try.

The brochettes were cooked on a webber with mesquite/charcoal in the center and we put the shrimp around the outside so the bacon would have a chance to cook a little before the shrimp were done. I think about 7-9 minutes watching them closely. I think with the pork we put it on the smoker on high(400) for about 45 min, then medium (300) for about 35-40 min, then the low smoke setting(150 give or take) for about 31/2 hours. I need to figure out some kind of apple flavored glaze or some kind of sauce for it, then it would be perfect. Thanks to all for the feedback

great pictures for sure. You have some big beastly busses sir. I make something similar called a bacon bomb and it's delicious but can kill a unhealthy person in a couple minutes lol. not to hijack but everyone needs to see more bacon. I take 3 lbs of ground pork and flatten it out season it add cheese, onions, mushrooms, and peppers. then roll it up in to a log and wrap with bacon. coat in bbq sauce slow cook for 5 hours.
