So I hear treated a few knives, two 1085 small ones and a nakiri made from nitro v. The nitro went in the freezer for an hr after.

Chucked them all in the oven after it had cool d then accidentally set the temp to 820c and walked away.

Came to check on them an HR later to find everything glowing and the bar of aluminium I had clamped the nakiri to for straightening purposes was a pool of liquid.

Have I wrecked all of them? None were going to customers anyway so is there any saving them? None were protected from O2 and I have to presume they all saw 800 ish for 40 mins or more

How thick were the edges before HT? You will have some decarb, but it might not be as bad as you think. You will need to redo the HT obviously.

I'm assuming the nitro v was a blank without bevels? If so it'll be fine. Even if you did grind bevels you just have to remove some decarb as noted above.
