Bannock and JK's

Hi folks -

Several previous posts here had made me curious about bannock bread, so I decided I would give it a try.

I made a simple bread with 2c flour, 1ts baking powder, 1/2tbs salt, 2tbs sugar, 2tbs butter and 3/4 cup water.

The dough came out, well, doughy. I made three cigar shaped loaves and then went out to the yard and sparked up a fire.

I wrapped the bread around a green stick (pear wood) and allowed the bread to "bake" next to the fire for 20 minutes or so.

The bread was actually very tasty!

I will be making a batch up for the JK Skills Gathering next weekend. I will be using dried cranberries and walnuts in that batch.

Give this a try - it is surprisingly tasty and easy to make. I will do this with my granddaughters - I am sure they will love helping make the dough and then cooking it themselves around a campfire.

Absolutely awesome. I've always been curious about "baking" over an open fire. You've inspired me to give it a try. Now, I gotta get my butt out and do it, I may try it this weekend on my next outting. Thanks for the info.

Does the green wood transfer any taste to the bannock?

Very nice. I wish I could make the JK gathering. Be nice to hold some of his knives because there's a couple models I like the looks of.

As for the baking, did you cook it over a fresh fire or did you let it burn to coals first?

Hi Moose -

I was not sure if the wood would transfer any flavor to the bread, and that is why I chose a branch from a pear tree - but I did not detect any flavoring from the wood.

I also have to report that I did not get it cooked all the way through - a bit of it was still a little doughy, but it tasted great and of course in a camping situation it would be golden, cooked through or not lol....

I also baked two of the "loaves" in the oven at 400 degrees f for about 20 minutes, those came out perfectly browned and done through. This bread comes out a little harder than leavened bread.

Hi Shotgun -

I let it get a good base of coals first, and then set the stick so that the bread would be in the heat but not being licked with flames.

I highly recommend the JK Knives - Perhaps try one of his new basic scandi's to get your feet wet - he is selling those quite reasonably for a 100% handmade custom knife.

Pre-heating the stick first will help it cook more inside.

Very cool Andy! I'm looking forward to giving your recipe a try next Saturday. Just curious... what natural tinder was used to start that fire? Just askin', no particular reason. :D

Hi Jeff - Glad you are making the JKSG. I am not at liberty to say what native tinder I used to light my fire.... :eek: :D :p

Another good one is mix in a bit of brown sugar and some cinnamon.

If there is some of JackHammer's special seasoning left from The Gathering, you could add some of it.
