Barbecue & Smoker Time

It's time to get serious how you barbecue and smoke your meat. I just assembled the Hole thing yesterday and it took about two hours to complete. I am waiting on my cover for it and it will be here on the 10th. Before I use it I will need to cure the unit for two hours and then cool down naturally. :thumbup:

Nice set up there Terry! I'm gonna get two new grills later on this month I think. One gas, one charcoal. If I get lucky, I'll talk my wife into a smoker later on sometime. Not sure what kind of smoker to get though...gonna have to research it. Have fun with the new toy! -Matt-
 
It was Chicken and Babyback ribs Sunday here at the shop. Family came in and I started the BQQ at 10:00am. I made sure all was stuffed and satisfied with the barbecue. I smoked it in the smoking side and finished it off on the grill side. That's when I added one of my secret barbecue sauce recipes. That's when it went over the top. Just wanted to share this with some of my knife buddies. Want to update the status on my roof as well. I finally found a roofer to do the job here. I had guests coming over for the first real beer-b-que of the year.... cleaned grill and noticed 2 of the 4 burner tubes were rusted through.... went to Lowes they told me to call the maker to get the parts. Wound up going to Wally world for a charcoal grill, putting together a grill while trying to kill a hangover is not for the faint of heart.

We had ribeyes, my patented "welfare burgers", bacon-wrapped sirloin rounds, teriyaki chicken... all of it hickory smoked.. and a few beers. :)
 
I'm glad to see that you got some meat in that thing Terry! How was the overall perfomance?

I threw a little shindig for my daughters 3rd Birthday on Saturday...I got the meat cooked, but my grill was shot from being buried in snow all winter! At least now I have a real excuse to get my new grills! -Matt-
 
Got this one a few weeks ago and have been having a BLAST!

Last night it was wild turkey breast, legs, and thighs, over natural charcoal enhanced with hickory. Did a brush-on marinade of teryaki and honey and slow cooked at around 200 for three and a half hours.

Kid's couldn't get enough!
