Like jhalb said... they will sharpen S35VN and many other steels. If you want to keep the convex edge that comes on many knives, it's a good choice of compounds. But strop more frequently than you' sharpen on stones. Don't let the knife get dull. Use it... strop it. Get used to "touching up" rather than waiting to the point where you need to remove metal to get an edge.

Also, your choice of stropping mediums can influence how quickly you get your edge back. If your technique is good, a firmer strop can help get your convex edge back a little quicker than a soft one will. It won't give as much when you're stropping as a soft strop will. You'll have to watch your technique a little more carefully to maintain the convex edge but it'll sharpen up nicely on a firmer strop. Many folks use glass as the base and then lay their strop on that. I use a heavy steel base to keep the strop steady.
