Baryonyx American Mutt Puck vs Lansky Puck

Between the american mutt puck that Baryonyx carries and the coarse side of the Lansky puck which would be better at removing material? I have the Lansky and it seems like I'm constantly having to resurface it in order to get it to bite.
 
Pucks are best used for polishing up an edge after using a file. It sounds like you're talking about shaping rather than honing, and for that work I'd go the file route.

I have a file that I use but it's extremely coarse and leaves marks that take a while to get rid of with either of the pucks I have
 
I'm not all that experienced with sharpening, but can get an edge that suits me. After a coarse file like what you describe, I go to a finer file like one marked second cut or smooth. That helps take out the coarser file marks. Then, I start with a stone and have used an American mutt for some removal like taking down or smoothing a high centerline part, but mostly an Arctic Fox working with the coarse side then finer side. I use fine sandpaper like 800 then 2000 to really polish it up.
I really like the Arctic Fox over a Lansky.
