Got a BG from the Exchange a few weeks ago and, out of all the midsize to large knives I've had, I like it best. It balances well, chops well, is adequate to good at slicing, and just feels like a knife and not a club with an edge.

I would like to know the edge geometry on these so I can keep the edge maintenanced. Thanks.

If it's still got the original edge grind, it's almost certainly convex, which means the angle would be variable. If you want to maintain the factory edge, the sandpaper/mousepad trick should work well, or maybe a loaded strop.

When sharpening knives, I've always used a v-grind. So when my blades need sharpening, that's what they get, no matter what edge grind they came with. I'm just more comfortable with that.
 
I was hoping it was a convex, so if no one has any data to the contrary, I'm going to rig me up a two-sided strop kit today. Thanks.cwd
