Is it better to leave the black factory coating on or is it ok to remove it? Once its off, is there anything needed to be done to the blade to keep it's condition? Thanks

From my very limited perspective, it's all about preference. Once you strip it, it will be more susceptible to rust, but cleaning it after use and a thin coating of oil will prevent that. I use Ballistol on all my knives and have yet to have any rust.

Everyone has opinions about which oil to use as well...mineral oil, Ballistol, etc. Again, it all comes down to preference.

Thanks MikeyJ, Iv'e seen some videos of people cutting with the black coating and say that it slices better with the black coating off, plus I really like the way it looks stripped! Thanks for the oil suggestion.

If you just clean your blade after use, you shouldnt have a problem. I think people in coastal areas have more issues. When I was in the Navy, if I took a Cold Steel Carbon V knife outside its sheath, it would spot up like crazy. What little bit of rust I do rarely see, cleans up fine with some fine wet/dry sandpaper.
