I've heard that gun bluing is NOT food safe but I don't use the stuff so can't give you a definitive answer. You should think about just giving it a patina. Check out what can be done with mustard.

gun blue is poisonous yes, now once the blue has cured and you use a finisher like flitz wax (caranuba) it seals it and is generally safe (i wouldnt just eat straight off the blade of course)

I like a homemade patina and most of my knives have it but I want something diffrent this time. Bascily I want rifle construction in a knife. Blued steel and American Walnut stocks. I use to have some machine blue around here that you just rubed on and then when it turned white you wiped it off. I might try to find this stuff and when I use the knife and sharpin it I can just touch up the shiny spots. My main concern is how to do the handles.

epoxy,pin, and peen the handles on. use 24 hour epoxy not that fast dry crap. Bluing does wear just like the epoxy coating but reapplication is easy.

I just dig that look. I want to blue one of mine eventually, but just don't have the stuff to do it laying around. Then I just end up patina-ing again :).

easy to find and cheap too. permablue super blue is what i use now, but the regular stuff is great to start with.
