I know, the posed shot with the BK7 sucks, but what can you do? I've got a big freakin SLR and nobody was around to snap the pic. Yes, I did trim this brisket with the BK7 and applied Dillo Dust liberally for some awesome flavor. Cooked this one hot and fast (yes it can be done and a fork goes in like butt-ah). I separated the point from the flat with the BK7, which could have been done with a spoon, I imagine. :D This one was made for Easter dinner, but since we'll be in church, I had to make it in advance. I'll heat the flat up for dinner, and the point I will keep for some brisket sammich goodness for the rest of the week. It's trimmed, in the fridge, and the sample piece in lingering sweetly in my mouth.

Derek. Guyon. I see your biscuits and I raise you a brisket.

Ooooooh yeah. I've slow smoked a few briskets in my day. About 12 hours for a 15 pounder.
 
I'm gonna need your home address, bud. If you and your housemates want to go ahead and tie yourselves up in the basement and save me some trouble, even better. I can be outta there in 90 seconds.

I hope they were excellent! This turned out to be a hit at Easter dinner. Nobody missed the ham at all.

BRL - no need to lock us up, I'll share. Pack a jacket, it's in the mid-40's here!
 
I wanted to reply earlier but all of the drool locked up my keyboard. Very nice :thumbup:
