I know, the posed shot with the BK7 sucks, but what can you do? I've got a big freakin SLR and nobody was around to snap the pic. Yes, I did trim this brisket with the BK7 and applied Dillo Dust liberally for some awesome flavor. Cooked this one hot and fast (yes it can be done and a fork goes in like butt-ah). I separated the point from the flat with the BK7, which could have been done with a spoon, I imagine.
This one was made for Easter dinner, but since we'll be in church, I had to make it in advance. I'll heat the flat up for dinner, and the point I will keep for some brisket sammich goodness for the rest of the week. It's trimmed, in the fridge, and the sample piece in lingering sweetly in my mouth.
