Two months ago I purchased a Lansky Turn Box to sharpen my Delica. Worked with this device to try and learn proper technique, checked out YouTube vids. Was able to get the knife sharp, but always felt it could be a bit sharper.
So I picked up a used SharpMaker on the Bay to give that a go. Although I like the Lansky, the SharpMaker definitely is an upgrade. Enough background. Here are my questions:
-The angles stated on the Lansky are 20 and 25 degrees; the Sharpmaker is 30 and 40. I followed instructions on the Lansky, going from 20-25, moving from medium to fine. Should I do the same on the SharpMaker?
-Am I going to have issues using the Sharpmaker since I already went through the process on the Lansky at different angles?
-I assume I am better off sticking with either one system/angle rather than trying both. Will I cause damage or harm if I try to use both systems?
-Not sure I did myself a favor buying a used Sharpmaker, as the rods seem pretty smooth. Is this an issue? Do the Shapmaker rods wear out? Is there any way to tell, other than your knife just not getting sharp?
I also realize that I am new to this (only sharpening for about 8 weeks), so it very well could be me and my technique. Any advise would be appreciated.
