Beginners questions on sharpening and different steels

Hello,

I am looking to learn about sharpening. No point in getting nice knives imo if you don't know how to care for them. I have read that some steels are very hard to sharpen and some are much easier.

I am considering buying a Kershaw Chill or a Ontario Rat 1, and using them a ton just to dull them to practice sharpening. I am going to order a Spyderco Sharpmaster to learn how to do this properly.

The chill is 8CR13MoV stainless steel
and the Rat 1 is AUS 8...

Since price wise they are basically the same, which would be a better knife for learning how to sharpen?

What would be a good next level steel in terms of difficulty to get a bit better?

Check the Maintenance, Tinkering & Embellishment Section of the forum. Lots of discussion of sharpening different knives and different steels there.
 
You’ll find that both 8cr13mov and aus8 are very easy to sharpen. Both take a good edge and polish nicely.
