What large machines should I have?
Are there recommendations on machines to
buy or to avoid? What are the pros/cons?

Basic requirements for a serious knifemaker :

Variable speed belt grinder(knifemaking machine) with as many accessory attachments as you can afford( large contact wheel, tiny contact wheel, flat platen, slack belt setup.

Buffing setup(if less than 1HP 3300RPM, if more than 1HP you could go to 1750RPM)

Drill press or milling drill press.

Band saw to cut stock and handle materials.

Venilation system to remove dust from the work area, the bigger the better.

The above is for the sreous fixed blade stock removal maker.

A surface grinder is nice also. As for a mill I would seperate the two from each other . A 59 dollar drill press and a 600.00 mini mill from Kovals would do the trick for me. Also I would buy two grinders. A wilton for roughing and a buur king for finishing.
Have them set up to do just that . Then you save time and steps changing machine around for differnt operations.
Get your own heat treating equiptment also. olympic makes a nice oven with a digital controller for about 600.00 .
