I have a craftsman 42 inch stand up sander 1 speed
"Crazy"
I have seen on line plug in, plug out variable speed modules.
Could I hook one up to it?

Those are usually for a dc type motor, not for what you have.

If you are talking about those cheap speed controllers like the one below, NO. Those control a different type of motor. It will slow the grinder by cutting the voltage. The motor may overheat as well as have no power.
