Is there a good reason I can't put a hub for a disc on one side of my variable speed grinder? I don't have funds for a dedicated disc grinder right now.
 
A photo would help, but if you can get a hub threaded for the grinder shaft - yes it should work.

Some builders offer an attachment arm that generally runs as you described with the grinder running parallel to the disc face. I know Brodbeck makes one for their 2x72. It’s doable.
 
I did. I have the origin blade maker lightening drive wheel and drilled and tapped three 10-24 holes in the aluminum hub of it. Counterbored 3 holes in a disc and press fit a short 5/8 dowel pin to keep it centered in relation to the wheel.
 
The few downsides might be....

*clearance to the right of your machine and work bench/ mounting. (Make sure you will have enough room)
*disk orientation. I like having mine running parallel to the ground.

Otherwise it will work. I seen many attachments for sale that do this

Edit...third reason.
I like the ability to go back and forth between my disk and 2x72.
I correct the lines, and dips in the disk. Then go back to work on the 2x72, continuing with the grind.

I wouldn't want to keep changing my setups
