Any last minute recommendations for a decent kitchen knife, at around 50 to 60 dollars? This will be a gift for a family member who isn't exactly a knife knut, but I think they could appreciate something better than the cheapo beaters they have currently. Feel free to brainstorm here. I'd like to give them something traditional Japanese styled, but am open to other suggestions.

I like the baccarat dimishri? range(Probably spelled wrong)

You can just get the santoku on its own.

Or the kyoshi.

Good knives. In the cheaper range.

While it's not Japanese, take a look at the Victorinox Fibrox 8" chef's knife. It's used in many many commercial kitchens. It's tough enough to withstand less than perfect chef technique and soft enough to sharpen relatively easily. But holds an edge okay, considering its RC 56 hardness. And it's one of the most easily found chef's knives on the market.

If you have a restaurant supply store near you (many of them are open to the general public), I recommend you visit the store & see what brands/models they carry. Many commercial kitchen knives are around your desired price point because they get used hard & replaced fairly frequently.
