A customer brought me some knives made from saw blades, and he wanted them done at 25dps. I feel they could have gotten much sharper than that, so what angle do you use for those things?
Without knowing the heat treatment and particular alloy, that's hard to guess at. But I find that most steels, properly heat treated, can easily handle 15dps.
I grind my scythe blades at 7-9° per side and use them to take out woody late-season goldenrod and burdock without issue. Proper technique is necessary to avoid damage, of course, but the more familiar you are with how a particular steel and heat treatment can be expected to perform in a given context of use, the less "insurance factor" you need built into your geometry.
