Best Central American Destination?

I don't have a lot of time, but I'm trying to plan a trip to Central America, having never been there. I think my tastes are probably pretty similar to a lot of the members on here ... my ideal would be a cool city/town/village at least a little bit out of the way where you can take in some of the local culture, food, etc. and can be a base for some great outdoor adventures. Looking at the sort of attractions in the area, I would expect that there are probably places where we could go on hikes of say 5 to 15 miles into the jungle to find ruins or natural wonders that most tourists won't make it to. Most of what I have seen so far looks like it is right off the road for tour bus types to get to. I like some tough terrain and going to places that are off the beaten path. It would also be nice to be able to change up the scenery and go to say a beautiful beachfront area for a few days.

An added bonus would be a place where I'm not going to get parasites, explosive digestive issues, kidnapped/assaulted/robbed/murdered, etc.

So far, it seems like there may be places in Belize that might be a good destination.

For any recommendations, I'd appreciate it if you could include any advice about travelling there, such as whether I need to buy kidnapping or other insurance, etc.
 
Sorry, been out of the loop. First: The US dollar is legal currency (no need for money changer). If you want beaches, I can direct you to San Blas Archipielago, in the Atlantic coast, near Colombia or to Isla Colón, Bocas del Toro, near Costa Rica, also on the Atlantic. In the Pacific side: Contadora, Punta Barco, Las Lajas and Boca Chica (in my province, Chiriquí; if you are interested in fishing (like marlin, sworfish, tuna, it can also be arranged), just to mention a few. You want tropical rainforest: no problem. If you need medical attention, we have some of the absolute best private hospital in the area: Punta Pacífica, Paitilla, San Fernando (in Panamá City) or Hospital Chiriquí, in my home town, David (meaning, CT scan, MRI, ICU, etc.), with a lot of bilingual people to assit you (and I mean not only doctors: secretaries, lab personel, clecks, etc.). Did I mention that in the highlands of Chiriquí, lives a sizable expat (american, canadian, mainly) community. It is best if you google "Panamá" (or Republic of Panamá".
