best custom folding knife or flipper knife for fighting and big hands

There is a lot to that - like preferences/experience and skill sets of user.

What do you think is your personal ideal for blade shape, length, etc.?

A Demko custom Espada or Vaquero style of large size might be good or a Szabo design or have someone make a custom version of CRKT Otanashi no Ken.
 
I find that the Super Karambit fits my hand nicely. Not a flipper though, but it's got the wave.
 
Have you looked at any of the production collaborations to get some basis for what you want out of a knife? I mean, there are countless custom designs out there that might fit your preferences, but you can probably narrow down a few designs or designers by checking out collabs. I'm partial to RJ Martin's designs, and although I haven't taken the plunge into custom knives yet, I'd probably start with his Avenger. I have always liked CRKT's Hammond Cruiser and have a couple of them, and Jim Hammond's Cruiser MV looks sweet. I don't know if the Boker Plus Kalashnikov 101 is an in-house design, but something of comparable size is about as big as I'd want to go with a folder.
 
What styles do you prefer? For example, some people favor the karambit where as others an upswept clip point similar to a Bowie in which the styles of usage between the two are about as different as they come. I like Emerson's smaller folding karambit, but it's a not a knife to be used for most utility work in that it is intended mainly for defensive usage.
 
I have a kirby lambert snap flipper 2014 tanto. I tried to fit this into my hand in many different fashions and just couldn't make it fit comfortably. I have recently ordered a solo v2 tanto flipper. I am partial to the flipper because i feel it deploys more quickly. I have heard of the legendary maker RJ martin, though I have never tried his designs out. I was also considering the homicide, because of the multiple finger grooves in the slab scale design on the hilt, however aesthetically this knife looks bulky and unrefined in my opinion. I am trying to find the ultimate blend of firm and function.
