Best General Kitchen Knife around $20?

I need a nice multi purpose chefs knife or santoku around $20, something like Dexter Russels. Steel doesn't have to be top grade, just needs to take an edge and hold it for a few cooking sessions. Thanks
 
I'm a terrible cook but i like the old hickory line. good steel,low price, will rust if you look at them wrong so don't. nothing fancy just a good knife for the price. later, ahgar

It's hard to beat Dexter Russell or Forschner at the price point your talking about. You'll find one or the other in most of the restaurant kitchens and commercial fishing docks in America.
 
With over 4,000 posts on this board, I'm sure you've been around and heard others recommend Forschner (Victorinox). Since you don't mention length, purpose, or materials, Forschner is the first thing that comes to my mind. I have a 6" Forschner Chef's knife for my multipurpose kitchen chores. It's much more functional than a typical paring or kitchen utility knife and the fibrox handles, while not pretty, have held up for me after 2+ years of use. It only costs about $14 (www.eknifworks.com) and it's the first knife my wife and I reach for when we are cooking. If you want a longer blade, they have a 7.5" chefs for just a dollar more, then there's the 8", 9", etc.
 
Thanks, I'm not sure where there is a local dealer for Forschner and I think I really want a Santoku, mainly b/c I deal with veggies. Also has to survive mom abuse, so no carbon steels.
 
I have two Forschner chefs knives one 6 inch and one 8 inch. I also have a
set of Wusthofs which are very nice, but for the price it's very hard to beat the forschners. In his post falconstein suggested the 6 inch chefs knife, It is about as good an all around kitchen knife as I have ever used. It's not fancy but it takes and holds an edge, ergonomics are good, blade shape is good. It just plain works

Dexter-Russel usuba is $17. It is an awesome kitchen knife. I would pair that up with a victorinox paring knife $5. and you are good to go.

Can you run to $45.00? It will last you all your life and it is a great knife for a knife enthusiast made by Tojiro of Japan. They are laminated construction.

If not, getting a Japanese Santoku might be difficult. The big kitchen knife makers are Global, Porsche, Victorinox, Sabatier, Wustoff, Gustav Emilern.

A Chinese veg cleaver would be within your budget. I left a Chinese Santoku style knife at the hotel I just sold!
