I really love a bagel in the morning. Especially after dating a Jewish girl for 2 years and having bagels and lox on Shabat morning... I have developed a taste for great spreads. I mostly use Philly brand tomato and basil but am open to try anything.

The problem is to find REAL bagels with a chewy texture . But you can make your own !! The proper ones are first put in boiling water for a while then baked , thus the term 'water bagels'. Make them with whole wheat flour and they're even better.
Toppings ? Lox or a slice of ham.
The bagel is not a Jewish invention but from Austria even though now associated with Jews. The Italian word is ciambelline.

Ain't nothing better than cream cheese and green olives for a schmear. The sweet creamy taste of the cheese and sour of the olives compliment each other perfectly.

Just a bit of lox (about one slice for 2-3 bagel portions of cheese) chopped up very fine and mixed into the cream cheese. (Use Philly brand made in the US, not Philly brand made in Australia. Same company but for some reason there is a slightly different taste.) Then.... and this is the part that makes it really taste so good... a paper thin slice of onion on top! But it must be paper thin!!!! Thick onion overpowers the flavor of the cheese and lox!

WHIPPED cream cheese is for goys and feygeles.

If it is a cream cheese shmear you want, you start with a block of Philly, and mix in your nova chunks, or veggies, or green onion or whatever, and spread it on the bagel. If you add swiss cheese and thinly sliced onion, that is a sandwich.

Really depends upon what kind of mood you are in. Chopped chicken liver salad, herring salad or whitefish salad all make superb shmears.
