What is the best sharpener for S30-V and 3G Laminated powder 62 HRC steels? If price isn't an issue is Wicked Edge Precision Sharpener the best for these steels? Also, should one purchase the accessory stones if purchasing this system?
The WE is arguably one of the best. The Edge-Pro is another. The 1x42" Kalamazoo belt grinder is what a lot of the top professionals use. The Kalamazoo is my favorite, unless something has to be just dead nuts perfect. Then I use the EP.
Also - how does one know the correct angle to sharpen on the blade. Do you try to replicate the degree/angle that came from the factory? How do you know with out directly asking the manufacture or is there a standard angle that most knives are sharpened at?
The WE and EP are both gradated, but what is more important is how you use your knife, or how you want it to perform. Thinner angles (sharpest) -with the steel you're talking- would be about 11*- 13*, "standard" 16*-18*, heavy use, 22*-25*.
Im a newbie as well but my understanding is that the angle depends on the steel and the intended use of the knife. I put a real acute edge on my Koster Nessie. Not the best for an O1 utility blade.
no best sharpener, just best for your taste. For me, I like my paper wheels. fast, effective, mirror scary edge in less time then any other system I know of.
