Best Stockman

Buck, Case, or Queen would be my suggestion. You should be able to choose from a couple of models, handle materials and styles from each one. All are quality knives.
 
I'd go for the buck series 500 or someother number. but the wood is nice, blades take a good edge and walk and talk are great....

There are many great stockmans, my favorites are in the Buck 700 series, the Camillus #67, and some of the Case stockmans.

As far as Remington, their recent knives will be very much like the Camillus knives of the same models, because Camillus actually manufactures them for Remington.

If you would like to buy Case stockmans, you better handle them before you purchase them. Some of the Case knives display wide fit/finish or blade play variations. But you can pick up very nice and well built pieces too.
For real users you may consider the Uncle Henry line of Schrade: they are not so nice looking but very well suited for harder use too (e.g. they have thicker brass liners than the Case knives).
I have no experience with the Camillus, Buck or Remington knives.

I like the Buck 300 series. These knives are saw cut delrin composite handles. Also known as the the Hammer and nail knives. There is a companion out which is a small stockman and a larger one. I believe the numbers are 303 & 307 respectively. I think the best place to find a 307 is either Ebay or Harold from Klink Knife Works.

I have just about all the black buck handle 300 knives. They are very well made and I had better luck with these knives than the Case knives and these are cheaper! I have never had one with blade play. I sharpen them on my DMT benchstone and they can very, very sharp.

The Eye Brand stockman is my favorite. The blades have a nice flat grind and hold a good edge. Since this thread was started by someone asking for a stainless stockman, you should know that Eye Brand uses carbon steel in most of their models. The standard size stockman is a little smaller than most manufacturer's, 3.5" closed, but the main blade is of pretty good size relative to the closed length. The blades are forged, and I really like the long pull. You can get them in stag, bone, or yellow composition. The best prices I have seen are with Blowoutknives.com or Knives Plus in Amarillo, TX (they don't have a website)

Browning makes one with 440c blades, very nice. But really if you want the best think about non-stainless. Like Schrade Old Timmer.
 
Case is my favorite of the pocket knives, but Buck, Eye Brand, and Schrade are very good quality and functional blades. As for the Remington knives, I'm not that impressed.
