I am wanting to add a set of water stones to my collection. I was curious what is the best value in full-size japanese water stones? Are there any that are recommended? Any that should still be avoided?

I gather Lee Valley Tools has some popular and economical offerings. I suspect you'll get a more useful array of responses if you put your question in the Maintenance Tinkering and Embellishment forum. If you want a take on it from people who are professional users rather than just knife enthusiasts you could do a lot worse than pitching your question here.

Bester and Shapton Glass stones are good values, depending on what grit ranges you are looking for. Don't skimp on waterstones too much because the cheaper ones are vastly inferior, they are just way too soft and slow-cutting. In general most of the good quality ones are in the same price range for their grit.

You can save by skipping grits. 10x jumps are fine for starting out, it's just a bit more work. 2-4x jumps are more ideal in the long run.

Take this advice and you won't learn the hard way.
