Best way to grind bevels??

I have mainly worked with hollow grinding but I have done several knives with flat or convex grinds. I have gotten good results but I'd like to know a better way to get nice shoulders where the bevel starts. I want to do several Bowies this way and I am starting with 1/4 and 5/16 stock...so the shoulder would go all the way up to the spine. Any good suggestions????
 
This is the method that works for me:
Start with a 60 grit belt running down the center of the platen/wheel. Only concern yourself with cutting in evenly side to side, not with getting a sweeping plunge at this point. When the grind lines are about 1/8" from where you want to stop prior to heat treat, switch to a flexible 220 grit belt. Run the belt over each side and break the belt in with some scrap steel. When grinding with this and subsequent belts, run the belt over the edge of the platen/wheel about 1/4". Running it over more will give a more sweeping affect to the plunges.
