Best way to Grind?

Well I've grinded edge up and edge down. Edge up I sometimes cut the belt. Edge down I seem to have a sloppy bevel. How do all you pro's grind?
 
Started doing edge down but recently went to edge up and have seen the light. :-).

Start by taking off a 45 degree bevel to the thickness you want to leave the edge before HT then you can grind whatever bevel you want without eating up your belts or cutting them.

To sharpen you will have to go to edge down or you will cut your belts all to pieces.

I usually grind with my edge up. But when I start blending I sometimes do that with my edge down. Using the rocking motion. This is what I call blending. Keep in mind what kind of grind you are doing as in flat grinding or hollow grinding. All this can play a part in the grinding process. If you are cutting belts you may be holding the edge too much on angle. If you are fortune enough to have a verbal speed control tried to slow it down a bit. I hope this was as help to you. There was a huge thread on this not to long ago. Seemed to me to be about 65% edge up 35% edge down and up depending on the side of the knife. I have seen both and they both work. Seems to me the edge down people chose that method becuase they feel there week hand wont give ad good of preformance. Either wat you have soemthings to get used to and perfect.

I like edge up so you can see whats going on without flipping the knife.
