I have a spare paring knife (https://www.ikea.com/gb/en/p/briljera-paring-knife-50392802/) that I would like to blunt and round the tip as much as possible.

I'd like to use it as a deer skinning knife and you can see a specialist version here with a ball tip: https://www.monarchcountryproducts.co.uk/mora-roeing-bleeding-knife ---- The idea is just that the blunt tip does not pierce the meat while the sharp part of the knife cuts the skin.

I have a Ken Onion Work Sharp, do you think I can use it to round the tip?

Or would I be better off with a metal file?

Heck, I can round a knife tip without even trying!
That said, rounding the tip should be easy enough. Adjust the speed down if you are worried about overheating the tip. Once rounded the edge at the tip will be gone and the bevel will need to be re-ground to the edge.
Use a coarse belt when rounding in order to remove steel as there’s less chance of overheating. If the blade gets too hot to touch it’s close to being overheated.
Keep it cool .

Thanks, practically speaking would you just switch the ken onion into this freehand mode for axes etc (shown here:
) and then clamp the knife and use the tool freehand to round it off like you say.

I’d try running the tip into the belt near the idler wheel so the belt is traveling downward. Set the speed so the blade can be controlled with both hands.
I now have a round tip paring knife!
