I have read with interest various threads here and in the toolshed comparing D2 to 1095 and other steels commonly found in modern traditional-style folders. My question is not about the metal but rather what kind of edge will be better for whittling wood. Would I be better served aiming for a polished smooth edge, or a less polished almost "toothy" edge? What's going to be best for whittling? Thanks!
If you think it matters, lately I have been sharpening on a 1"x30" belt sander with varying grits (when reprofiling or as needed), finishing on a loaded leather belt, then moving to a hand strop loaded with 5 micron Veritas compound. The finish I get is what I would call polished. I'm wondering if I should stop at a lower grit and avoid stropping to enhance whittling. Currently I'm using a CV Case medium stockman.
